The last couple of days have been all about being in bed and eating takeout food...so last night I needed a good ol' homecooked "skinny" meal! My friend Joey told me he made some chicken parm the previous night....that sounded like just what my tastebuds needed. I decided to take his recipe in a skinny direction.
Menu:
Skinny Chicken Parm over Spaghetti Squash "Pasta"
Ingredients:
1 egg white
4 chicken breasts
Skim shredded mozz cheese
Sauce of your choice- I used Fra Diavolo for some spice
Whole Wheat Bread Crumbs
Spaghetti Squash- cut in half with the seeds and stuff taken out
To cook the chicken:
Preheat oven to 450 degrees
Pound those chicken breasts (yep) to get them nice and thin
Dip in the egg white then coat with bread crumbs...place on pan
Bake for 15 minutes
Remove from oven- add sauce to both sides and sprinkle cheese on top
Throw back in for 6 minutes and voila!
While that is cooking for the final 6 minutes- take the two halves of the spaghetti squash- put on a paper towel in the microwave and cook for 12 minutes. Let it cool for a hot sec then scrape away to make the delicious pasta!- mix with some sauce...add the chicken parm on top! Oh, and the most important step of all: pour yourself a nice big glass of wine!
