The other day I was in a soup making mood...doesn't everyone get in those? Well, I was googling soups and just couldn't decide...from butternut squash to pumpkin taco chilli, there were just too many options. I asked my boyfriend what he was craving and he told me that growing up his mom always made the best soup. She emailed the recipe right over. That is one of my favorite things- recreating something that you had growing up...something that tastes like home and your childhood.
Brunswick Stew:
I turned his mom's recipe into a crockpot recipe ....and random stuff I decided to throw in last minute:)
In a crockpot throw in 1.8-2lb of chicken breast
5 cups of water
1 onion
2 cloves of minced garlic
1 medium carrot sliced (or a handful of baby carrots like I did)
2 medium potatos peeled and chopped
Salt
Pepper
Dry Mustard
Red Pepper Flakes
Cook on low for 4 hours
Add one large can of diced tomatoes (with juice) and some splashes of hot sauce
I added a handful of chopped brussel sprouts- I read okra is good as well
Cook on low for another hour (if you are leaving it all day in the crockpot while you are at work...just add the tomatoes and any raw veggie from the start)
After 5th hour- take out chicken and pull it...mix it bag in
Add 10oz of frozen lima beans and 10oz of white corn
cook on high for an hour
